Apple Baked Oatmeal is a fun breakfast treat for your family. Of course, if you are like me, you sometimes serve breakfast at dinner.
Breakfast at dinner is the one meal a week I am allowed to serve a meatless meal. As I have stated several times over at Bakingwithmom.com, my husband is a meatatarian. So when I attempt to serve something without meat, he isn’t a fan. Breakfast for dinner, I serve eggs. He counts eggs as meat-ish.

I like to make breakfast foods. Those mornings where we don’t have to be anywhere in a hurry is a great time to try a new recipe like apple scones or homemade cinnamon rolls. This apple baked oatmeal will be a welcome addition to a quick and healthy breakfast. It came together in a hurry and did not take long to bake. I think I could make this before school with time not being an issue.
Fall time is a great time to try apples recipes, since apples are abundant. I truly enjoy the smell of apples and cinnamon baking. The baked oatmeal has apples, applesauce and cinnamon. So the combination is a keeper from the start. Serve with additional apples or syrup on top. I would even think of adding raisins to the batter. The raisins would compliment the apples very well. Any way you try it is will be a delicious breakfast (or supper!) treat.
- 3 cups quick oats
- ½ cup brown sugar
- 1 tsp cinnamon
- 1 tsp baking powder
- 2 cups milk
- ½ cup applesauce
- 2 T melted butter
- 2 eggs
- 1 cup finely chopped, peeled apples
- Mix all dry ingredients into a large bowl (set aside)
- Beat eggs in a medium bowl
- Add milk, applesauce and butter and mix well
- Add wet ingredients to dry ingredients and stir
- Fold in apples
- Spread into a greased, 9x13 pan
- Bake at 375* for 17-20 minutes or until knife inserted into the center comes out clean
