One of the most common recipes I get asked for is my Mexican Lasagna recipe. A sweet Titus 2 woman in my life passed down this simple and fun meal to me long before I was cooking for a family of five. When I introduced it to my family- they LOVED it! We never have left overs of this – and if we do, they get taken the next day for lunch! You can’t go wrong with this meal. It takes about 45 minutes to bake – and 15 minutes to prep. Here we go:
– 2 lb ground beef or turkey
– 1 jar of salsa (as spicy as your family likes)
– 1 package of taco seasoning
– Large Tortillas
– 1 bag of Mexican Cheese
1) Brown you ground meat, as you would for Tacos. While you are doing this, preheat the oven to 350.
2) When the meat is brown, and you have added the taco seasoning, add in the jar of Salsa.
3) Simmer for 5 minutes
Add a layer of cheese
Another layer of tortillas
Continue to add layers until you have used all your meat and cheese. The top layer should be cheese.
Bake in the oven for 45 minutes.
Optionally, you can add a layer of refried beans, then sour cream, then lettuce, then tomato and even onion on the top after it is cooked. Due to some pickier eaters in my home, I serve these items on the side. I make (or we get from the Mexican restaurant) Spanish rice, and chips and Queso.
